Has to be oil in this recipe b / c part of the recipe is infusing oil. It is a recipe one of the local indie Pizza places use for their rolls and I want to try my hand at it way it is and duplicate as closely as I can. As specialty oil, Orville Redenbacker sells it with pop corn, and crisco has butter flavored baking sticks and shortening. I still see it in institutional supply in gallon bottles and 17. 5 containers, so it is still around, just seems to have fallen out of favor with retail consumers at some point.
